Eye Beans

Little known but truly delicious, these beans are a type of legume very rich in properties. Easy to recognize thanks to the small black spot, the eye, that they have on the side. As already mentioned, they enjoy many properties and are very beneficial for our body.


  • Rich in vitamins of groups A, B, C;
  • Rich in minerals such as iron, magnesium, potassium, calcium, zinc and selenium;
  • 100 grams of beans have approximately 20 grams of protein;

They have a low glycemic index and this means that they help keep blood sugar at optimal levels, while helping to keep cholestrerol at bay.

Also ideal for those on a diet, given that they are low-calorie, contain little fat but at the same time provide a lot of fiber and therefore contribute to increasing the sense of satiety as well as having positive effects on any intestinal problems. Black-eyed beans are widely used in American and African cuisine, traditionally they are eaten on New Year's Day a bit like we do with lentils because they are considered good luck charms.

In the kitchen...

Their preparation is very simple. Like all other legumes, you need to soak cowpeas overnight, then rinse them well and cook them in boiling water (without salt). To make them more digestible in case of intestinal fermentation problems, add a small piece of previously rehydrated kombu seaweed to the cooking water. Once ready (they cook a little more quickly than other beans) they can be used in different ways, in cereal and legume soups, combined with rice or pasta or as a second alternative to animal proteins, for example sautéed with a nice chilli sauce prepared at home or combined with breadcrumbs and vegetables to make vegan burgers.
