The name Azuchi (or Adzuki) bean translates into Japanese as “Small Bean”. Being a real concentrate of vegetable proteins, vitamins (B1, B2, B3), mineral salts such as iron, copper, magnesium, manganese, zinc, potassium, this legume is considered the "King of Beans" precisely because of its numerous elements nutritional and healthy.

Also called Green Soybean, due to its small soy-like appearance and its intense green colour, the Azuchi bean is rich in soluble fibre, useful for those who suffer from constipation. With little fat but above all very little sugar, this legume is a consumable food even for people who need to keep their glycemic index under control. It is also suitable for those with a strong lack of iron, and is useful for purifying the liver and kidneys, thanks to its diuretic properties.

In addition, the Azuchi bean has:

  • A high level of isoflavones, useful for increasing immune defenses and maintaining a good state of health of the nervous system;
  • It does not contain gluten, so it can also be consumed by those who have to follow a celiac diet.

Preparation

The first thing to do will be to immerse the Azuki beans in cold water and leave them to soak for at least about 5 hours, but in some cases (also according to the recipe you want to cook) even up to 8 hours. After draining them, they can be boiled, boiled or sautéed; ideal for creating delicious side dishes, soups, minestrone, homemade creams or to add to salads.
